With regard to 'properties' obviously in the sense of characteristics, quality/qualities, and/or attributes.
The answers to these questions may be obvious to everybody else.
May one use the expression 'product properties' to refer to the properties of a product?
May one refer to the properties of a product by using a possessive pronoun, singular or plural as appropriate, i.e. 'its properties' or 'their properties'.

You are correct in both instances. You may use either expression to your liking.
A caveat, though: it must be clear what noun the possessive pronoun is referencing.
