The hour's time is prep time. Half an hour goes before you mix-in the yeast culture with the mash. The other half hour is afterwards.

Then it takes 2 to 3 weeks for the mash to ferment.

I hope that was clear.

At the end of the process, it take about another hour to siphon and pasteurize and bottle the finished home made wine.

I agree but by and large EU rules sound stricter than the US.
Making your own tastes much better. I found that out quite by surprise.
I've had very tasty homegrown wines of the old British varieties and they tasted fine and they seriously did the job but my experience lately has taught me that there are some seriously nice wines that also do the job in an incredibly elegant way.
The only disadvantage of making your own is the equipment you need and the labor that goes into it.
So you don't have any decent vintners near you?
But once you have the equipment then that burden is over. ...
And then you get the punishment of drinking the stuff.

Does it? I'd have thought that it was a message that shows up on ignored posts but then I've never used the function so just guessing. Personally I just don't read what I wish to ignore.
