I’d say it’s an apple at each stage except 7 & 8. Those stages are excluded because at those defined points in the life cycle of the apple, more of the apple has changed into something other than apple, than has yet to change.
As VT well knows, the relevance is how this applies to human life, and the implication of the definition as applied to abortion. What is the implication? That like an apple, a human is human at all stages of development, except 7 & 8.
Cutting to the chase, the honest approach to justifying abortion is to acknowledge that abortion ends a human life and that doing so is the mother’s decision, and right to decide. Why? Because that’s what is going on.

That is unnecessary, at least with me.

You’re too smart, and the situation makes it unnecessary.
I’ll answer in the spirit that the question was asked.
The double-think gymnastics are in the spirit of sparing feelings in order to benefit the mind/body of the woman who sought abortion out of need. This is to aid her towards peace of mind, for her benefit and others, for a good future.
With history as evidence, there are situations in societies when the society, through individuals acting in roles, determine that some humans must be killed.
This is sanctioned by society because these acts are considered necessary by society. Soldiers are sanctioned to kill. So are cops, executioners, and by those with triage authority. They are sanctioned under specific conditions.
Well, so are women sanctioned to end life under the specific condition of pregnancy. This authority is an aspect of social living, often made necessary by life in the society. This is specifically the way that things are now in the civilized world, and it explains a lot more than slogans such as,
My body My Choice.
