Well, recently, I went through a phase of wearing a different hat every day in an attempt to impress someone. In the end, I ran out of hats and they lost interest in me.

"It's funny you should say that" is an idiomatic expression. It is usually used in relation to a coincidence of some kind. For further explanation, please ask someone else.

Should is subjuctive mood of shall.

Perhaps the French grammar could provide some further explanation.
