They didn't convert to capitalism. They' adopted elements of capitalism. China has always been capitalist. The model has been state-capitalism. China has never been communist. The change in the 20thC was from Feudal Capitalism with disparate control of resources through multi-cephalic fiefdoms, to a full state central control of all resources.
"Communism" has been nothing more that the means of propaganda and mind control; a pretence of unity and participation, where actually it was never more than a super feudalism.
The idea of communism is to put the means of production in the hands of the people. It is for the state to capitalise and control the entire economy.
